1 yellow bell pepper, sliced into strips

4 whole wheat tortillas

1 cup fresh spinach leaves, tightly packed

1 cup shredded mozzarella cheese (or vegan cheese alternative)

1/4 cup olive oil

2 tablespoons balsamic vinegar

1 teaspoon garlic powder

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Prepare the Vegetables: In a large mixing bowl, combine the thinly sliced zucchinis, red and yellow bell peppers, onion, and halved cherry tomatoes. Drizzle the mixture with olive oil and balsamic vinegar. Sprinkle in the garlic powder, along with salt and pepper to taste. Gently toss the vegetables using your hands or a large spoon until they are evenly coated with the oil and seasonings.

    Grill the Vegetables: Preheat a grill or grill pan over medium-high heat. Once hot, add the prepared vegetable mixture to the grill.
