Ingredients

For the Turkey Mixture:

1 lb ground turkey

1 tablespoon olive oil

1 small onion, finely diced

2 cloves garlic, minced

1 red bell pepper, diced

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional, for extra heat)

Salt and pepper to taste

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen, or canned)

Juice of 1 lime

For the Rice Base:

1 cup brown rice (or quinoa for a lighter option)

2 cups vegetable or chicken broth

1 teaspoon garlic powder

1 teaspoon onion powder

Salt to taste

Toppings:

1 cup cherry tomatoes, halved

1 avocado, diced

1/2 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup fresh cilantro, chopped

1/2 cup sour cream or Greek yogurt

Lime wedges for serving

Jalapeño slices for extra heat (optional)

Instructions

Prepare the Rice:

    - In a medium pot, combine the brown rice, broth, garlic powder, onion powder, and a pinch of salt.

      - Bring the mixture to a boil over medium-high heat.

        - Once boiling, reduce the heat to low, cover, and let it simmer for about 45 minutes (or according to package instructions) until the rice is tender and the liquid is absorbed.

          - When done, fluff the rice with a fork and set it aside.

            Cook the Turkey Mixture:

              - In a large skillet, heat the olive oil over medium heat. Add the diced onion and red bell pepper.

                - Sauté for 3-4 minutes, stirring occasionally, until the vegetables are softened.

                  - Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

                    - Add the ground turkey to the skillet, breaking it apart with a spatula. Cook until the turkey is browned and cooked through, about 6-8 minutes.

                      - Season the mixture with chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and pepper. Stir well to combine.

                        - Add the black beans, corn, and lime juice to the skillet, mixing thoroughly. Cook for another 3-5 minutes until everything is heated through.

                          Assemble the Bowls:

                            - To serve, place a generous scoop of the fluffy rice or quinoa at the bottom of each serving bowl.

                              - Top the rice with a hearty portion of the zesty turkey mixture.

                                - Add the halved cherry tomatoes, diced avocado, shredded cheese, and a sprinkle of fresh cilantro over the top.

                                  - Finish each bowl with a dollop of sour cream or Greek yogurt, along with lime wedges and jalapeño slices for those who enjoy a bit of heat.

                                    Serve and Enjoy:

                                      - Serve the taco bowls immediately, allowing everyone to customize their toppings to their liking.
