Ingredients
  

1 lb (450g) shrimp, peeled and deveined

2 medium zucchinis, sliced into thick rounds

1 bell pepper (your choice of color), cut into bite-sized pieces

1 cup cherry tomatoes

2 lemons (1 for juice and zest, 1 for wedges)

4 tablespoons olive oil

3 cloves garlic, finely minced

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and black pepper, to taste

Fresh parsley, chopped (for garnish)

Skewers (bamboo or metal; soak bamboo skewers in water for 30 minutes before using)

Instructions
 

Prepare the Marinade: In a mixing bowl, combine the juice of one lemon, 4 tablespoons of olive oil, minced garlic, smoked paprika, dried oregano, salt, and black pepper. Whisk the mixture thoroughly to ensure all ingredients are well incorporated.

    Marinate the Shrimp: Add the peeled and deveined shrimp to the marinade, making sure they are evenly coated. Cover the bowl and let the shrimp marinate for at least 20 minutes to allow the flavors to meld.

      Prepare the Vegetables: While the shrimp marinates, slice the zucchinis into thick rounds and cut the bell pepper into bite-sized pieces. Set the prepared vegetables aside.

        Preheat the Grill: Heat your grill or grilling pan over medium-high heat until it's hot and ready for cooking.

          Assemble the Skewers: Take the soaked skewers (if using bamboo) and thread the marinated shrimp, zucchini rounds, cherry tomatoes, and bell pepper pieces onto each skewer in an alternating pattern. Leave a small gap between each ingredient for even cooking.

            Grill the Skewers: Place the assembled skewers on the preheated grill. Grill for approximately 2-3 minutes on each side, or until the shrimp turn opaque, and the vegetables are slightly charred and tender.
