1 cup couscous

1 1/4 cups chicken broth (or water)

1 pound chicken breast, cut into bite-sized pieces

1/2 cup buffalo sauce (adjust to your heat preference)

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper, to taste

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup green onions, chopped

1/2 cup crumbled blue cheese (optional, for garnish)

Fresh parsley, chopped (optional, for garnish)

Instructions
 

Cook the Couscous: In a medium saucepan, bring the chicken broth (or water) to a vigorous boil over medium heat. Once boiling, stir in the couscous, cover the pot, and immediately remove it from the heat. Allow it to sit undisturbed for about 5 minutes to absorb the liquid. Afterward, fluff the couscous with a fork and set aside.

    Prepare the Chicken: In a large mixing bowl, add the bite-sized chicken pieces. Drizzle with olive oil, then sprinkle in garlic powder, onion powder, salt, and pepper. Toss well to ensure all the chicken pieces are evenly coated with the seasoning mix.

      Cook the Chicken: Heat a large skillet over medium-high heat. Once hot, add the seasoned chicken to the skillet in a single layer. Cook for approximately 6-8 minutes, stirring occasionally, until the chicken is golden brown and no longer pink in the center.

        Add Buffalo Sauce: When the chicken is fully cooked, pour the buffalo sauce into the skillet over the chicken. Use a spatula to stir and coat the chicken pieces generously with the sauce. Allow it to simmer for an additional 2-3 minutes until the sauce thickens slightly.
