1 red bell pepper, finely diced

1 tablespoon soy sauce

1 tablespoon hoisin sauce

1/2 teaspoon toasted sesame oil

Salt and black pepper, to taste

1 cup seedless watermelon, diced

1 tablespoon honey

1 tablespoon rice vinegar

1 teaspoon cornstarch mixed with 2 teaspoons water (for thickening)

1 head of butter lettuce (or iceberg lettuce), leaves carefully separated

Fresh cilantro, chopped, for garnish

Sliced green onions, for garnish

Prepare the Watermelon Glaze: In a blender, combine the diced watermelon, honey, and rice vinegar. Blend until the mixture is smooth and silky. Transfer the blended mixture to a small saucepan over medium heat. Allow it to come to a gentle simmer, cooking for about 5 minutes while stirring occasionally to enhance the flavors.

    Thicken the Glaze: Gradually stir in the cornstarch-water mixture into the simmering watermelon glaze. Keep cooking for another 2-3 minutes or until the glaze has thickened to your desired consistency. Remove the saucepan from heat and set the glaze aside for later use.
