Ingredients

2 large lemons (juiced, approximately ½ cup of juice)

1 cup water

½ cup granulated sugar

1 teaspoon chili powder (adjust based on desired spiciness)

¼ teaspoon salt

1 teaspoon freshly grated lemon zest (adds brightness)

Fresh herbs (such as mint or basil) for optional garnish

Instructions

Make the Syrup: In a small saucepan, mix the water, granulated sugar, chili powder, and salt. Heat the mixture over medium heat, stirring continuously until the sugar has completely dissolved. Once dissolved, remove the saucepan from heat and allow the syrup to cool for about 10 minutes.

Combine Ingredients: In a mixing bowl, combine the cooled syrup, freshly squeezed lemon juice, and lemon zest. Stir thoroughly until all components are well-blended and uniform.

Prepare the Molds: Carefully pour the citrus mixture into popsicle molds, ensuring you leave a little space at the top of each mold to allow for expansion as the popsicles freeze. If you want to add a touch of color and flavor, gently place a small piece of fresh herb (mint or basil) into each mold.

Insert Sticks: Insert popsicle sticks into the center of each mold, ensuring they are upright and positioned correctly.

Freeze: Transfer the filled molds into the freezer and let them freeze for at least 4 to 6 hours, or until they are completely solid.

Unmold and Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. This will loosen them and make removal easier. Gently pull out the popsicles and enjoy their refreshing zing!

Prep Time: 15 mins | Total Time: 6 hrs | Servings: 6 popsicles

                - Presentation Tips: For an appealing touch, serve the popsicles on a decorative platter, garnished with additional fresh herbs and lemon slices.
