Ingredients

2 cups sweet corn (fresh off the cob or thawed if using frozen)

1 cup all-purpose flour

1/2 cup cornmeal

1/4 cup finely chopped fresh chives

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 teaspoon freshly ground black pepper

1/4 teaspoon cayenne pepper (optional, for an extra kick)

2 large eggs

1 cup buttermilk

1/4 cup melted butter (plus extra for greasing the pan)

1/2 cup grated sharp cheddar cheese (optional, for added flavor)

1/4 cup crème fraîche or sour cream (for serving)

Instructions

Preheat the Oven: Start by preheating your oven to 375°F (190°C). Prepare a 9x5-inch loaf pan by greasing it generously with melted butter or cooking spray.

Prepare the Corn: For fresh corn, carefully cut the kernels off the cob and set aside. If you are using frozen corn, simply thaw it slightly in the microwave or in a pan over low heat.

Create the Dry Mixture: In a large mixing bowl, combine the all-purpose flour, cornmeal, baking powder, baking soda, salt, black pepper, and cayenne pepper. Whisk together until all ingredients are evenly mixed and there are no lumps.

Combine Wet Ingredients: In another bowl, whisk together the eggs, buttermilk, and melted butter until the mixture is smooth and well incorporated.

Mix the Wet and Dry Ingredients: Pour the wet mixture into the dry ingredients. Gently stir with a spatula or wooden spoon until everything is just combined. It’s perfectly fine if there are a few lumps; overmixing can make the loaf dense.

Fold in Corn and Chives: Carefully fold in the sweet corn kernels and chopped chives. If you are using cheddar cheese, fold that in as well to distribute it evenly throughout the batter.

Transfer to Loaf Pan: Pour the batter into your prepared loaf pan, using the spatula to smooth the top for an even finish.

Bake: Place the loaf pan in the preheated oven and bake for about 40-45 minutes. The loaf is ready when the top is golden brown and a toothpick inserted into the center comes out clean.

Cool Down: After baking, remove the loaf from the oven and let it cool in the pan for about 10 minutes. Then, carefully transfer it to a wire rack to cool completely.

Serve: Once the loaf has cooled, slice it into generous pieces. Serve warm with a dollop of crème fraîche or sour cream on top for a delightful finishing touch.

                        - Presentation Tips: For an appealing display, arrange the slices on a platter and sprinkle a few extra chopped chives over the top. A small bowl of crème fraîche in the center invites guests to serve themselves!
