Ingredients

1 pound cremini mushrooms, finely chopped

1 medium onion, diced

2 cloves garlic, minced

1 tablespoon olive oil

1 tablespoon unsalted butter

1 teaspoon soy sauce

½ teaspoon dried thyme

Salt and pepper to taste

12 slider buns (choose between white or whole grain)

8 ounces Swiss cheese, sliced

1 tablespoon Dijon mustard

Fresh parsley, chopped (for garnish)

Instructions

Sauté Vegetables: In a large skillet, heat the olive oil and butter over medium heat. Once melted, add the diced onions. Sauté until they turn translucent and softened, about 4-5 minutes. Add the minced garlic to the skillet and cook for an additional minute, letting it become fragrant without burning.

Cook Mushrooms: Add the finely chopped mushrooms to the skillet, stirring well to combine. Continue to cook the mushroom mixture for about 8-10 minutes, or until the mushrooms are tender and most of their moisture has evaporated.

Season: Pour the soy sauce over the mushroom mixture and sprinkle in the dried thyme. Season generously with salt and pepper to taste. Stir everything together and allow it to cook for an additional 2 minutes to meld the flavors. Once done, remove the skillet from heat and set aside the mixture.

Prepare Buns: Preheat your oven to 350°F (175°C). While the oven is heating, slice the slider buns in half and arrange them on a baking sheet with the cut sides facing up.

Assemble Sliders: Spread a thin layer of Dijon mustard on the cut side of each bun. Evenly distribute the mushroom mixture over the bottom halves of the buns. Top each with a generous slice of Swiss cheese.

Top with Buns: Place the top halves of the buns onto each assembled slider to create the complete sandwiches.

Melt Cheese: Prepare to bake by covering the baking sheet with aluminum foil. Place it in the preheated oven and bake for about 10 minutes. After this, carefully remove the foil and continue baking for an additional 5 minutes, or until the cheese is melted and bubbly.

Serve: Once done, take the sliders out of the oven. Sprinkle chopped fresh parsley over them for a touch of color and freshness. Serve warm and enjoy these delicious savory treats!
