Ingredients

2 cups broccoli florets

2 cups cauliflower florets

3 tablespoons olive oil

Salt and pepper, to taste

8 ounces elbow macaroni (or your preferred pasta)

2 cups sharp cheddar cheese, shredded

1 cup mozzarella cheese, shredded

1 cup whole milk

1 cup heavy cream

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon mustard powder

1/2 teaspoon smoked paprika

1/2 cup breadcrumbs (optional, for topping)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Begin by setting your oven to preheat at 425°F (220°C) to ensure it is hot enough for roasting your vegetables.

Roast the Vegetables: In a large mixing bowl, combine the broccoli and cauliflower florets with the olive oil, ensuring they are evenly coated. Season with salt and pepper to taste. Spread the florets in a single layer on a baking sheet and roast in the preheated oven for 20-25 minutes. Stir the vegetables halfway through cooking to promote even browning. They should be tender and have slight char marks when done.

Cook the Pasta: While the veggies are roasting, fill a large pot with salted water and bring it to a rolling boil. Add the elbow macaroni and cook according to the package instructions until just al dente (still firm). Drain the pasta and set it aside.

Prepare the Cheese Sauce: In a large saucepan over medium heat, pour in the milk and heavy cream. Gradually whisk in the garlic powder, onion powder, mustard powder, and smoked paprika until fully combined. Once the mixture begins to warm, add the shredded cheddar and mozzarella cheeses. Stir continuously until the cheese melts into a smooth and creamy sauce. Taste and adjust seasoning with salt and pepper if needed.

Combine Pasta and Sauce: In a spacious mixing bowl, combine the cooked macaroni with the roasted broccoli and cauliflower. Gently pour the cheese sauce over the pasta and vegetables. Use a spatula to fold and mix everything together until all components are well-coated with the delicious cheese sauce.

Transfer to Baking Dish: Grease a 9x13 inch baking dish with cooking spray or a little olive oil. Pour the macaroni and cheese mixture into the dish, spreading it out evenly. If you wish, sprinkle the breadcrumbs evenly across the top for added crunch and texture.

Bake: Place the baking dish in the oven and bake for an additional 15-20 minutes. The top should be golden brown and the cheese bubbly when done.

Garnish and Serve: Once baked, carefully remove the dish from the oven and allow it to cool for a few minutes. Before serving, generously garnish with freshly chopped parsley to add a pop of color and freshness.

Enjoy your delightful Cheesy Broccoli & Cauliflower Bake—a comforting and cheesy dish that the whole family will love!
