Pumpkin Spice Tiramisu

1 cup strong brewed coffee, cooled to room temperature

1/2 cup pumpkin puree (canned or homemade)

1/2 cup mascarpone cheese

1 cup heavy whipping cream

1/2 cup granulated sugar (adjust to taste)

1 teaspoon pure vanilla extract

1 teaspoon pumpkin spice blend (or a blend of 1/2 teaspoon cinnamon, 1/4 teaspoon nutmeg, and 1/4 teaspoon ginger)

20-24 ladyfinger cookies

Unsweetened cocoa powder, for dusting

Dark chocolate shavings (optional, for an elegant garnish)

Additional pumpkin spice (optional, for garnish)

Prepare the Coffee Mixture: In a shallow dish, pour the cooled brewed coffee. Add 2 tablespoons of pumpkin spice to the coffee and stir thoroughly to combine. Set this coffee mixture aside so that the flavors develop.

    Make the Pumpkin Mixture: In a medium mixing bowl, combine the pumpkin puree, mascarpone cheese, granulated sugar, vanilla extract, and the remaining pumpkin spice. Using a whisk, beat the mixture until it is smooth and creamy. Taste and adjust the sweetness, adding more sugar if desired.

      Whip the Cream: In a clean, separate bowl, use an electric mixer to beat the heavy whipping cream until soft peaks form. Once whipped, gently fold the whipped cream into the pumpkin mixture using a spatula. Take care to maintain the lightness of the whipped cream to ensure your tiramisu remains fluffy.

        Dip the Ladyfingers: Take each ladyfinger and briefly dip it into the coffee mixture—holding it in for about 1-2 seconds. Be careful not to soak them, as you want them to retain their structure when layered in the dessert.

          Assemble the Tiramisu: In a rectangular or square dish, start by placing a layer of the dipped ladyfingers at the bottom. Pour half of the pumpkin mixture over the layer of ladyfingers, smoothing it out evenly with a spatula. Add another layer of dipped ladyfingers followed by the remainder of the pumpkin mixture on top, ensuring an even layer.

            Chill the Tiramisu: Cover the dish tightly with plastic wrap and transfer it to the refrigerator. Chill for a minimum of 4 hours, but overnight is ideal to allow the flavors to meld and the tiramisu to firm up to perfection.
