Ingredients

4 ripe bananas, peeled

1 cup creamy peanut butter

1 tablespoon honey or maple syrup (optional, for added sweetness)

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional, for warming flavor)

1/2 cup granola or crushed nuts (for topping)

A pinch of sea salt

Instructions

Prepare the Bananas: Start by peeling the ripe bananas and placing them in a blender or food processor. Blend on high speed until the mixture is smooth and creamy, resembling a purée.

Mix the Ingredients: Add the creamy peanut butter, honey or maple syrup (if desired), vanilla extract, and ground cinnamon (if using) to the banana purée. Blend again until all ingredients are thoroughly combined and smooth.

Taste and Adjust: Take a moment to taste the mixture. If you prefer a sweeter flavor, you can add extra honey or maple syrup. Blend briefly once more to incorporate any additional sweetness.

Prepare the Mold: Line a 9x5-inch loaf pan or a silicon mold with parchment paper. Ensure that there is some overhang on the sides, which will make it easier to remove the bars later.

Pour the Mixture: Carefully pour the banana-peanut butter mixture into the prepared mold. Use a spatula to smooth the top, ensuring an even surface.

Add Toppings: Generously sprinkle the granola or crushed nuts across the top of the mixture. For a delightful sweet and salty contrast, add a light sprinkle of sea salt over the topping.

Freeze: Transfer the mold to the freezer, allowing the bars to freeze for a minimum of 4 to 6 hours, or until they are completely firm.

Slice and Serve: Once frozen, remove the mold from the freezer. Use the parchment paper overhang to lift the bars out. Slice them into equal-sized bars or squares and enjoy these refreshing treats!

Store: If there are any leftover bars, place them in an airtight container and store them in the freezer for up to two weeks to maintain freshness.
