1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried thyme

½ teaspoon red pepper flakes (optional for heat)

Salt and black pepper to taste

1 cup orzo pasta

4 cups chicken broth (low-sodium)

1 cup cherry tomatoes, halved

1 cup baby spinach

Juice of 1 lemon

¼ cup grated Parmesan cheese

Fresh parsley, chopped (for garnish)

Instructions
 

Season the Chicken: In a bowl, season the bite-sized chicken pieces with salt, black pepper, oregano, thyme, and red pepper flakes. Toss until well coated.

    Heat the Skillet: In a large skillet, heat the olive oil over medium-high heat. Once hot, add the seasoned chicken pieces and cook for 5-7 minutes, or until the chicken is browned and cooked through. Remove the chicken from the skillet and set aside.

      Sauté Garlic: In the same skillet, add the minced garlic and sauté for about 30 seconds until fragrant, being careful not to let it burn.

        Cook the Orzo: Add the orzo pasta to the skillet, stirring it to coat in the oil and garlic. Pour in the chicken broth and bring to a simmer. Reduce heat to medium-low, cover, and let cook for about 10 minutes, stirring occasionally, until the orzo is tender and has absorbed most of the liquid.

          Mix in Chicken and Veggies: Return the cooked chicken to the skillet along with the cherry tomatoes and baby spinach. Stir everything together and cook for an additional 2-3 minutes until the spinach has wilted.
