8 oz elbow macaroni

2 cups pumpkin puree (either canned or freshly made)

2 cups vegetable or chicken broth

1 cup milk

2 cups shredded cheddar cheese

1 cup grated Parmesan cheese

1 tsp garlic powder

1 tsp onion powder

1/2 tsp ground nutmeg

Salt and black pepper to taste

1 tbsp olive oil

1/2 cup breadcrumbs (optional for topping)

Fresh parsley for garnishing (optional)

Instructions
 

In a large skillet or deep frying pan, warm the olive oil over medium heat.

    Incorporate the elbow macaroni, pumpkin puree, broth, and milk into the skillet. Mix well until all ingredients are combined.

      Sprinkle in garlic powder, onion powder, ground nutmeg, salt, and pepper. Bring the concoction to a light boil, then lower the heat to a simmer.

        Continue to cook, stirring occasionally for roughly 8-10 minutes, or until the pasta is al dente and most of the liquid has been absorbed.

          After the pasta is cooked, lower the heat to low and stir in the cheddar cheese along with half of the Parmesan cheese until the mixture is melted and creamy.

            For a crispy topping, distribute the breadcrumbs and the remaining Parmesan cheese evenly over the pasta.

              Activate the broiler in your oven and position the skillet beneath it for 2-3 minutes until the surface becomes golden and bubbly. Keep a close eye to prevent burning!

                Take it out of the oven and allow it to rest for a few minutes. If you wish, add fresh parsley as a garnish before serving.
