Ingredients

1 cup creamy peanut butter (choose natural for a healthier option or classic for sweetness)

1/2 cup powdered sugar

1 teaspoon pure vanilla extract

1 1/2 cups graham cracker crumbs

1 cup semi-sweet chocolate chips

2 tablespoons coconut oil (or unsalted butter for a richer flavor)

Sea salt, for sprinkling (optional for a gourmet touch)

Instructions

Prepare the Peanut Butter Mixture:

In a large mixing bowl, combine the creamy peanut butter, powdered sugar, and vanilla extract. Use a spatula or wooden spoon to stir the mixture until it's completely smooth and well blended. Gradually add in the graham cracker crumbs, mixing until fully incorporated. The final mixture should be thick and creamy.

      Mold the Peanut Butter Cups:

Line a standard muffin tin with paper liners. Take a heaping tablespoon of the peanut butter mixture and press it into the bottom of each paper liner, using your fingers or a small ice cream scoop to flatten it slightly. This creates a solid and even base for each cup.

          Melt the Chocolate:

In a microwave-safe bowl, combine the semi-sweet chocolate chips and coconut oil. Microwave the mixture in 30-second intervals, stirring well between each interval, until it is melted and smooth. Be careful not to overheat the chocolate.

              Add the Chocolate Layer:

Gently pour the melted chocolate over the peanut butter bases in the muffin liners, filling each about three-quarters full. Aim for an even coating over the peanut butter.

                  Chill the Cups:

Carefully tap the muffin tin against the counter top to help the chocolate settle evenly. If desired, sprinkle a small pinch of sea salt on top of the melted chocolate for added flair. Transfer the muffin tin to the refrigerator and chill for at least 30 minutes, or until the chocolate has fully set.

                      Serve and Enjoy:

Once the cups have set, gently remove them from the muffin tin and peel off the paper liners. Enjoy them right away, or store any leftovers in an airtight container in the fridge for up to a week.
