2 cups graham cracker crumbs

1/2 cup unsweetened shredded coconut

1/2 cup unsalted butter, melted

1/4 cup packed brown sugar

2 cups fresh blueberries (or thawed frozen blueberries)

1/4 cup granulated sugar

1 tablespoon cornstarch

2 tablespoons freshly squeezed lemon juice

1/2 teaspoon vanilla extract

1 cup cream cheese, softened to room temperature

1/2 cup powdered sugar

1 cup whipped topping (e.g., Cool Whip)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the crust:

    In a mixing bowl, combine the graham cracker crumbs, shredded coconut, melted butter, and brown sugar. Stir until all the crumbs are moistened and well-coated. Transfer this mixture into a greased 9x9-inch baking pan, pressing it firmly down into an even layer using the back of a measuring cup or your fingers. Once packed, place the pan in the fridge to chill and firm up for about 30 minutes.

      Make the blueberry filling:

        In a medium saucepan over medium heat, add 1 1/2 cups of the blueberries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir the mixture thoroughly and allow it to cook for about 5-7 minutes, or until it thickens and bubbles gently. Remove from heat and carefully fold in the remaining blueberries. Let this filling cool for about 10 minutes.

          Prepare the cream cheese layer:

            In a large mixing bowl, use an electric mixer to beat the softened cream cheese and powdered sugar together until you achieve a smooth and creamy consistency. Gently fold in the whipped topping until just combined, being careful not to deflate the mixture.

              Assemble the bars:

                Once the crust has chilled and set, spread the cream cheese layer evenly across the surface of the crust. Next, pour the cooled blueberry filling on top, spreading it out evenly to cover the cream cheese layer entirely.

                  Chill & serve:

                    Cover the baking pan with plastic wrap and refrigerate for at least 4 hours, ensuring the bars are fully set before serving. Once chilled, cut the dessert into bars. For a touch of freshness, garnish each bar with a sprig of mint leaves before serving. Enjoy chilled!
