1 block firm tofu, drained and pressed

1 tablespoon soy sauce

1 tablespoon sesame oil, plus more for cooking

1 tablespoon cornstarch

1 cup bell peppers (red, yellow, green), diced into small pieces

1 cup broccoli florets, chopped into bite-sized pieces

1 cup snap peas, trimmed

2 cloves garlic, minced

1 teaspoon ginger, freshly grated

2 green onions, sliced thinly

1 tablespoon sesame seeds, for garnish

Salt and pepper, to taste

12 mini phyllo dough cups (store-bought or homemade)

Prepare the Tofu: Start by cutting the pressed tofu into small cubes, roughly 1 inch. In a medium mixing bowl, combine the tofu cubes with soy sauce, sesame oil, and a pinch of salt and pepper. Gently toss to ensure the tofu is well-coated in the marinade.

    Coat the Tofu: Sprinkle the cornstarch over the marinated tofu. Toss the tofu gently until every piece is evenly coated with cornstarch, which helps achieve that crispy texture.

      Stir-Fry the Tofu: Heat a non-stick skillet or wok over medium-high heat. Add a splash of sesame oil. When the skillet is hot, place the coated tofu cubes in it.
