1 can (15 oz) chickpeas, drained and thoroughly rinsed

1 tablespoon extra virgin olive oil

1 teaspoon smoked paprika

½ teaspoon ground cumin

½ teaspoon chili powder

¼ teaspoon cayenne pepper (or to taste for heat preference)

Salt and black pepper to taste

2 tablespoons tahini

1 tablespoon freshly squeezed lemon juice

1 clove garlic, finely minced

1 small cucumber, diced into small cubes

½ red bell pepper, finely chopped

½ cup cherry tomatoes, halved

1 bunch of lettuce leaves (Butter or Romaine are recommended)

Fresh cilantro or parsley leaves, for garnish

Prepare the Chickpeas: In a medium mixing bowl, use a fork or potato masher to mash half of the chickpeas until creamy, leaving the remainder whole for a nice texture contrast.

    Season the Chickpeas: To the mashed chickpeas, add the olive oil, smoked paprika, ground cumin, chili powder, cayenne pepper, and a sprinkle of salt and black pepper. Mix well to ensure all the chickpeas are evenly coated with the spices.
