4 large eggs

1 cup whole milk

1 cup cherry tomatoes, halved

1 cup crumbled feta cheese

1/2 cup diced bell pepper (red or yellow)

1/4 cup finely chopped green onions

1 teaspoon dried oregano

1/2 teaspoon garlic powder

Salt and pepper, to taste

1 package (1 sheet) of puff pastry or a package of pre-made mini pastry shells

Olive oil spray or melted butter, for greasing the muffin tin

Preheat the Oven: Begin by preheating your oven to 375°F (190°C).

    Prepare the Pastry: If you are using puff pastry, roll it out on a lightly floured surface to a thickness of about 1/8 inch. Cut out circles with a diameter of approximately 3 inches and gently press these circles into a greased muffin tin, forming little pastry shells. If you chose to buy pre-made pastry shells, simply place them directly into the muffin tin without additional preparation.

      Make the Filling: In a large mixing bowl, whisk together the eggs and milk until thoroughly combined. Add the halved cherry tomatoes, crumbled feta cheese, diced bell pepper, chopped green onions, dried oregano, garlic powder, salt, and pepper. Stir until all ingredients are evenly mixed.

        Fill the Shells: Carefully pour the egg mixture into each prepared pastry shell, filling them about 3/4 full to allow for any expansion during baking.
