2 cloves garlic, minced

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp baking powder

Salt and pepper to taste

1/2 cup breadcrumbs (plus more if needed)

2 tbsp olive oil (for frying)

For the Hummus:

1 can (15 oz) chickpeas, drained and rinsed

1/4 cup tahini

3 tbsp fresh lemon juice

2 cloves garlic, minced

2 tbsp olive oil

Salt to taste

Water, as necessary to achieve desired consistency

For Assembly:

Mini pita breads (about 12)

Cherry tomatoes, halved (for garnish)

Cucumber slices (for garnish)

Fresh parsley leaves (for garnish)

Instructions
 

Make the Falafel:

    - In a food processor, combine the drained chickpeas, chopped parsley, chopped cilantro, diced onion, minced garlic, ground cumin, ground coriander, baking powder, salt, and pepper.

      - Pulse the mixture until well combined but still slightly chunky for texture.

        - Gradually add the breadcrumbs and pulse again until thoroughly mixed. If the mixture feels too wet, incorporate additional breadcrumbs a tablespoon at a time until it holds together.

          - Shape the falafel mixture into small balls, roughly 1 inch in diameter.

            Fry the Falafel:

              - Heat olive oil in a non-stick skillet over medium heat. Ensure the oil is hot before adding falafel to achieve perfect crispiness.

                - Carefully place the falafel balls in the skillet, taking care not to overcrowd them. Fry for 3-4 minutes on each side until they turn golden brown and crispy.

                  - Remove the fried falafel and place them on a paper towel-lined plate to absorb excess oil.

                    Prepare the Hummus:

                      - In a blender or food processor, combine the rinsed chickpeas, tahini, fresh lemon juice, minced garlic, olive oil, and salt.

                        - Blend the mixture until you achieve a smooth, creamy consistency. If it's too thick, slowly add water, one tablespoon at a time, blending until the desired consistency is reached. Taste and adjust the salt if necessary.

                            - Cut each mini pita bread in half to create small pockets.

                                - Gently insert 2-3 fried falafel balls into each pocket, ensuring they fit snugly.

                                  - Top with a slice of cucumber and a cherry tomato half, then garnish with fresh parsley leaves for a pop of color.
