Ingredients

1 medium head of cauliflower, cut into small florets

4 strips of bacon, cooked until crispy and crumbled

1 cup shredded sharp cheddar cheese

1/2 cup ranch dressing

1/4 cup green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and freshly ground black pepper to taste

1/2 cup breadcrumbs for an added crunch

Cooking spray or olive oil for greasing the muffin tin

Instructions

Preheat Oven: Begin by preheating your oven to 400°F (200°C). While it’s heating, lightly grease a standard muffin tin with cooking spray or a brush of olive oil to prevent sticking.

Steam Cauliflower: In a medium-sized pot, bring about an inch of water to a simmer. Carefully add the cauliflower florets and cover the pot. Steam the florets for 5-7 minutes, or until they are fork-tender but not mushy. Drain well and allow them to cool slightly before handling.

Mix Ingredients: In a large mixing bowl, combine the steamed cauliflower with the crumbled bacon, shredded cheddar cheese, ranch dressing, chopped green onions, garlic powder, onion powder, and a generous pinch of salt and pepper. Stir well until all ingredients are thoroughly mixed and the cauliflower is well-coated.

Fill Muffin Tins: Use a spoon to transfer the mixture into the greased muffin tins, filling each cup about three-quarters full. Gently press down on the mixture to help it hold its shape during baking.

Add Breadcrumbs: Evenly sprinkle breadcrumbs over the top of each cup, adding a nice crunchy texture when baked.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes. Wait until the tops are golden brown and the edges look crispy.

Cool and Serve: Once baked, remove the muffin tin from the oven and let the mini cups cool for about 5 minutes. Carefully remove each cup from the tin (a small offset spatula can help) and serve them warm as a tasty appetizer or as a side dish to complement your meal!
