Ingredients

For the Lemon Dill Chicken Skewers:

1.5 lbs chicken breast, cut into 1-inch cubes

1/4 cup extra virgin olive oil

Juice and zest of 2 large lemons

2 tablespoons fresh dill, finely chopped (plus extra for garnish)

3 cloves garlic, minced

1 teaspoon sea salt

1/2 teaspoon freshly cracked black pepper

1 teaspoon smoked paprika

1 teaspoon ground cumin

Skewers (wooden, soaked in water for 30 minutes; or metal)

For the Tzatziki Sauce:

1 cup thick Greek yogurt

1 cucumber, grated and excess moisture squeezed out

2 cloves garlic, minced

Juice of 1 lemon

1 tablespoon fresh dill, finely chopped

Sea salt and black pepper to taste

Instructions

Marinate the Chicken: In a large mixing bowl, whisk together the olive oil, lemon juice, lemon zest, chopped dill, minced garlic, salt, black pepper, smoked paprika, and ground cumin until well combined. Add the cubed chicken to the bowl, ensuring each piece is evenly coated in the marinade. Cover the bowl with plastic wrap and refrigerate for 30 minutes to 2 hours to allow the flavors to meld.

Prepare the Tzatziki Sauce: In another mixing bowl, combine the thick Greek yogurt, grated cucumber, minced garlic, lemon juice, and chopped dill. Stir well until all ingredients are integrated. Season with salt and pepper to taste, adjusting for personal preference. Cover the bowl and refrigerate for at least 20 minutes to enhance the flavor.

Assemble the Skewers: Preheat your grill to a medium-high setting. Carefully thread the marinated chicken pieces onto the skewers, leaving a slight gap between each piece to ensure even cooking.

Grill the Skewers: Once the grill is hot, place the skewers on the grates. Grill for about 10-12 minutes, turning occasionally for even cooking, until the chicken is golden and cooked through. Use a meat thermometer to check that the internal temperature has reached 165°F (75°C).

Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve warm, accompanied by the creamy tzatziki sauce for dipping. Garnish with additional fresh dill for an extra touch of flavor and presentation.
