1 lb (450 g) boneless, skinless chicken thighs or breasts

1/4 cup honey

Juice and zest of 2 limes

3 cloves garlic, minced

1 tsp soy sauce

1/2 tsp ground cumin

1/2 tsp paprika

Salt and pepper, to taste

2 tbsp vegetable oil

For the Rice:

1 cup jasmine or basmati rice

2 cups chicken broth or water

1/2 tsp salt

1 tbsp olive oil (optional)

For the Toppings:

1 cup cherry tomatoes, halved

1 avocado, sliced

1/2 cup corn (fresh or canned)

1/4 cup fresh cilantro, chopped

Lime wedges, for garnish

Optional: Sliced jalapeños for a spicy kick

Marinate the Chicken: In a medium mixing bowl, combine honey, lime juice, lime zest, minced garlic, soy sauce, ground cumin, paprika, salt, and pepper. Whisk until well blended. Add the chicken, ensuring each piece is generously coated with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for at least 30 minutes; for deeper flavor, marinate for up to 2 hours.

    Cook the Rice: While the chicken marinates, rinse the rice under cold running water until the water is clear, discarding excess starch. In a medium saucepan, combine rinsed rice, chicken broth (or water), and salt. Bring the mixture to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the saucepan, and simmer for about 15 minutes, or until the rice is tender and has absorbed all the liquid. Remove from heat and let the rice sit, covered, for an additional 5 minutes. Fluff with a fork, and optionally stir in olive oil for added richness.

      Cook the Chicken: Heat the vegetable oil in a large skillet over medium-high heat. Remove the chicken from the marinade, allowing any excess to drip off. Cook the chicken for 6-7 minutes on each side, or until golden brown and cooked through. Use a meat thermometer to check that the internal temperature reaches 165°F (75°C). Once fully cooked, transfer the chicken to a plate and let it rest for a few minutes before slicing it into strips.
