2 cups snow peas, ends trimmed

1 red bell pepper, thinly sliced

1 tablespoon fresh ginger, finely minced

3 cloves garlic, finely minced

1/4 cup honey

1/4 cup low-sodium soy sauce

1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

2 tablespoons sesame oil (or vegetable oil)

1 tablespoon rice vinegar

1 teaspoon red pepper flakes (optional, for heat)

2 green onions, finely sliced (for garnish)

Cooked jasmine rice or noodles (for serving)

Marinate the Shrimp: In a medium bowl, gently combine the peeled and deveined shrimp with 2 tablespoons of soy sauce, along with half of the minced garlic and ginger. Allow this mixture to marinate for about 15 minutes to absorb the flavors.

    Prepare the Sauce: In a small bowl, whisk together the honey, the remaining soy sauce, rice vinegar, and optional red pepper flakes. Set this sauce aside to allow the flavors to meld.

      Heat the Pan: In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Once the oil is shimmering, add the marinated shrimp in a single layer. Sauté for about 2-3 minutes, or until the shrimp turn pink and opaque. Once cooked, remove the shrimp from the pan and set aside.

        Sauté the Vegetables: In the same skillet, add the remaining tablespoon of sesame oil.
