Ingredients
  

2 medium-sized sweet potatoes

1 tablespoon of olive oil

1 teaspoon of chili powder

1 teaspoon of smoked paprika

½ teaspoon of garlic powder

¼ teaspoon of salt

1 cup of black beans, rinsed and drained

1 cup of cherry tomatoes, cut in half

½ cup of corn (can be fresh, frozen, or canned)

1 small red onion, chopped

1 cup of shredded cheddar cheese (or a dairy-free substitute)

1 avocado, chopped

Fresh cilantro, for decoration

Sliced jalapeños (optional)

Salsa, for serving

Instructions
 

Begin by washing and peeling the sweet potatoes. Cut them into thin rounds or triangular pieces to create the perfect nacho shape, about 1/4 inch thick.

    In a large mixing bowl, combine the sweet potato slices with olive oil, chili powder, smoked paprika, garlic powder, and salt, ensuring all pieces are evenly coated.

      Preheat your air fryer to 375°F (190°C).

        After preheating, arrange the sweet potato slices in the air fryer basket in a single layer. You may need to do this in batches. Air fry for 10-12 minutes, flipping them halfway through until they achieve a golden and slightly crispy texture.

          While the sweet potatoes are cooking, prepare the toppings. In a separate bowl, mix together the black beans, cherry tomatoes, corn, and diced red onion.

            When the sweet potato slices are finished, layer them on a large platter or baking sheet. Evenly distribute the bean mixture on top.

              Generously scatter the shredded cheddar cheese over the sweet potato base, and then place the platter back into the air fryer for an extra 2-3 minutes, just enough time for the cheese to melt.

                Once the cheese is melted, take it out of the air fryer and allow it to cool for a minute. Add diced avocado, fresh cilantro, and jalapeños if you like.

                  Serve while warm alongside your favorite salsa for dipping!
