1 lb ground turkey

1 cup cooked quinoa (preferably cooled)

1/2 cup finely chopped Hatch green chilies (can be fresh or canned)

1/2 cup diced onion

2 cloves garlic, minced

1/4 cup chopped fresh cilantro

1 large egg

1/2 cup whole wheat breadcrumbs

1 tsp ground cumin

1 tsp smoked paprika

1 tsp salt

1/2 tsp black pepper

1/4 cup shredded cheddar cheese (optional, for topping)

1/4 cup barbecue sauce (for topping)

Preheat the Oven: Begin by preheating your oven to 375°F (190°C). While it’s heating, lightly grease a standard muffin tin with non-stick spray to prevent sticking.

    Mix Ingredients Together: In a large mixing bowl, add the ground turkey, cooked quinoa, chopped Hatch green chilies, diced onion, minced garlic, chopped cilantro, egg, breadcrumbs, cumin, smoked paprika, salt, and black pepper. Use your hands or a spatula to mix these ingredients thoroughly until they are evenly combined and no dry bits remain.
