8 oz pasta (such as rotini or penne)

2 boneless, skinless chicken breasts

1 tbsp olive oil

Salt and black pepper, to taste

1 cup romaine lettuce, chopped

1/2 cup cherry tomatoes, halved

1/4 cup grated Parmesan cheese

1/4 cup croutons

1/4 cup Caesar dressing (store-bought or homemade)

Instructions
 

Cook the Pasta: Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions until al dente. Once cooked, drain the pasta in a colander and rinse it under cold water to stop the cooking process. Set the pasta aside to cool.

    Prepare the Chicken: While the pasta is cooking, preheat your grill or grill pan over medium-high heat. Pat the chicken breasts dry with paper towels to ensure a good sear. Drizzle the olive oil over both sides of the chicken and season generously with salt and freshly cracked black pepper.
