1.5 pounds baby potatoes, halved

3 tablespoons olive oil

1 teaspoon garlic powder

For the Garlic Butter Cod:

4 cod fillets (approximately 6 ounces each)

3 tablespoons unsalted butter

4 cloves garlic, finely minced

1 tablespoon freshly squeezed lemon juice

1 teaspoon fresh thyme, chopped (or ½ teaspoon dried thyme works well)

Salt and freshly ground black pepper, to taste

Preheat the Oven:

    Begin by preheating your oven to 425°F (220°C) to ensure it's hot enough for perfect roasting.

      Prepare the Potatoes:

        In a large mixing bowl, add the halved baby potatoes. Drizzle with olive oil, then sprinkle in the garlic powder, smoked paprika, salt, and black pepper. Use your hands or a spatula to toss the potatoes gently until they are thoroughly coated in the oil and seasonings.

          Roast the Potatoes:

            Transfer the seasoned potatoes onto a baking sheet, ensuring they are arranged in a single layer for even cooking. Roast in your preheated oven for 20-25 minutes, or until the potatoes are golden brown and fork-tender. Remember to flip them halfway through the roasting time to achieve an even crisp.

              Prepare the Garlic Butter:

                While the potatoes are roasting, melt the butter in a medium saucepan over medium heat.
