1/4 cup brown sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon sea salt

1/3 cup coconut oil, melted (or use unsalted butter if preferred)

2 tablespoons honey or maple syrup

1 teaspoon pure vanilla extract

For the Yogurt Filling:

2 cups Greek yogurt (plain or vanilla flavored)

1/4 cup honey or maple syrup (adjust based on your desired sweetness)

1 teaspoon pure vanilla extract

1 tablespoon fresh lemon juice

For the Jam Layer:

1/2 cup fruit jam (choose strawberry, raspberry, or your favorite flavor)

Optional: Fresh fruit pieces to fold into the yogurt layer (such as blueberries or diced strawberries)

Preheat the Oven: Set your oven to 350°F (175°C). Prepare an 8x8 inch baking dish by lining it with parchment paper, allowing some excess to hang over the edges for easy removal later.

    Prepare the Oatmeal Base: In a large mixing bowl, combine the rolled oats, almond flour, brown sugar, ground cinnamon, and sea salt. Mix well to ensure all dry ingredients are evenly distributed. Pour in the melted coconut oil, honey (or maple syrup), and vanilla extract. Stir until the mixture is homogenous and holds together nicely when pressed together with your hands.

      Bake the Oatmeal Base: Transfer the oatmeal mixture to the prepared baking dish, pressing it down firmly to create an even layer. Use the back of a spatula to smooth the surface. Bake in the preheated oven for 15 to 20 minutes, or until the top is lightly golden. Allow it to cool completely in the pan after baking.

        Prepare the Yogurt Filling: In a separate mixing bowl, whisk together the Greek yogurt, honey (or maple syrup), vanilla extract, and lemon juice until the mixture is creamy and smooth. If you’re adding fresh fruit, gently fold it in at this point to distribute it through the yogurt.

              Freeze the Bars: Cover the baking dish with plastic wrap or aluminum foil. Place it in the freezer and allow it to freeze for a minimum of 4 to 6 hours, or until it has set completely and is solid.

                Cut and Serve: Once the bars have set, lift them out of the pan using the parchment overhang. Transfer the slab to a cutting board and slice into squares or bars as desired.
