Ingredients

2 medium ripe bananas

1 cup Greek yogurt (choose plain or your favorite flavored variety)

1/3 cup almond flour (substitute with all-purpose flour if preferred)

1/4 cup mini chocolate chips

2 tablespoons maple syrup (or honey for sweetness)

1 teaspoon vanilla extract

A pinch of salt

1/2 teaspoon ground cinnamon (optional, for extra flavor)

Chopped nuts or colorful sprinkles (for garnish, optional)

Instructions

Prepare the Bananas: Start by peeling the ripe bananas and cutting them into 1/2-inch thick rounds. Arrange these banana slices in a single layer on a parchment-lined baking sheet to prevent sticking.

Create the Cookie Dough: In a mixing bowl, combine the almond flour, mini chocolate chips, maple syrup, vanilla extract, salt, and cinnamon (if using). Mix thoroughly until all ingredients are well incorporated and a dough-like consistency forms.

Assemble the Coins: Take small spoonfuls of the cookie dough and gently flatten each one slightly. Place a flattened piece of cookie dough on top of each banana slice and press down lightly to ensure they stick together.

Top with Yogurt: Using a spoon or spatula, dollop a generous amount of Greek yogurt on top of each banana and cookie dough stack, covering them well.

Freeze the Treats: Carefully place the baking sheet in the freezer and allow the banana coins to freeze for a minimum of 2 hours or until they are solid.

Serve and Enjoy: Once frozen, remove the banana coins from the freezer. If desired, sprinkle them with chopped nuts or colorful sprinkles for an added touch before serving. Enjoy these delightful, healthy treats straight from the freezer!
