2 cups plain Greek yogurt

1 cup granola (choose your favorite flavor)

1 cup mixed berries (fresh or frozen - strawberries, blueberries, raspberries)

1 ripe banana, sliced

2 tablespoons honey or maple syrup (adjust based on your sweetness preference)

1 teaspoon pure vanilla extract

Pinch of sea salt

Non-stick cooking spray or cupcake liners (for molds)

Mix the Yogurt Base: In a spacious mixing bowl, combine the plain Greek yogurt with the honey (or maple syrup), pure vanilla extract, and a pinch of sea salt. Stir well until the mixture is smooth and all ingredients are thoroughly integrated.

    Add the Crunch: Gently fold the granola into the yogurt mixture. Be careful to maintain the granola's integrity; you want it to add texture and crunch to your energy pops without becoming mushy.

      Prepare the Molds: If you’re using silicone molds or a cupcake tray, generously spray the inside with non-stick cooking spray or line with cupcake liners for easy removal later. Spoon a generous portion of the yogurt mixture into each mold or liner, filling them approximately halfway.

        Layer the Fruit: Top the yogurt base with a few slices of ripe banana and a selection of mixed berries. For a more visually appealing treat, alternate layers by adding another spoonful of the yogurt mixture on top of the fruits, if desired.

          Fill and Freeze: Pour the remaining yogurt mixture over the fruit layers, ensuring the molds are nearly full. Tap the molds gently on the counter to release any trapped air bubbles. Cover the molds with plastic wrap and insert popsicle sticks into the center if you’re using larger molds.

            Freeze Until Solid: Transfer the filled molds to the freezer and allow them to freeze for about 4 to 6 hours, or until they are completely solid.

              Serve and Store: Once the energy pops are fully frozen, carefully remove them from the molds. If you're having trouble, briefly run warm water over the outside of the molds to help loosen them. Enjoy the pops immediately for a refreshing treat, or store them in an airtight container in the freezer for up to 2 weeks for a quick snack later on.
