2 cups fresh strawberries, hulled and halved

2 ripe kiwis, peeled and chopped

1 tablespoon freshly squeezed lime juice

A pinch of sea salt (optional, for enhanced flavor)

Blend the Strawberries: In a high-speed blender, add the hulled halved strawberries, coconut water, honey (or agave syrup), freshly squeezed lime juice, and a pinch of sea salt. Blend on high until the mixture is completely smooth. Taste the blended mixture and adjust the sweetness by adding more honey if desired. Once blended, pour the mixture into a mixing bowl and set it aside.

    Prepare the Kiwi Layer: Without rinsing the blender, add the peeled and chopped kiwis. To facilitate smoother blending, add a splash of water or coconut water. Blend until the mixture is mostly pureed but retains a slightly chunky texture for visual interest. Set this kiwi puree aside in a separate bowl.

      Layer the Popsicles: Grab your popsicle molds and carefully pour the strawberry mixture into each mold. Fill them about halfway full, making sure to tap the molds gently on the counter to release any trapped air bubbles.
