2 cups fresh strawberries, hulled and sliced

1 cup Greek yogurt (you may choose plain or vanilla for added sweetness)

A pinch of salt

1 tablespoon fresh lemon juice

Silicone molds or ice cube trays

Prepare the Strawberries: Begin by thoroughly washing the strawberries under cool running water. Hull the strawberries to remove the green tops and slice them into small pieces. Set aside roughly 1/4 of these sliced strawberries for later decoration.

    Make the Yogurt Mixture: In a medium mixing bowl, combine the Greek yogurt, honey (or maple syrup if you prefer), vanilla extract, a pinch of salt, and fresh lemon juice. Using a whisk, blend all the ingredients together until you achieve a smooth and creamy consistency.

      Blend the Strawberries: Take the remaining sliced strawberries (3/4 of the total) and place them in a blender. Blend until you have a smooth puree. If you enjoy a bit of texture in your melts, stop blending a little earlier to retain some small strawberry pieces.

        Combine and Swirl: Gently fold the strawberry puree into the yogurt mixture using a spatula. Be careful to swirl them together just enough to create a marbled effect—aim for beautiful streaks of strawberry throughout the creamy yogurt rather than completely mixing them together.

          Pour into Molds: Using a spoon or a small ladle, carefully fill your silicone molds or ice cube trays with the mixture. Be sure to fill them about three-quarters full to allow for expansion as the mixture freezes.
