2 cups fresh or frozen raspberries

2 tablespoons honey or maple syrup (adjust to taste)

2 cups Greek yogurt (plain or vanilla)

1 teaspoon vanilla extract

A pinch of salt

Optional: fresh mint leaves for garnish

Prepare the Raspberry Puree: In a medium saucepan over medium heat, combine the raspberries and honey (or maple syrup). Cook for approximately 5-7 minutes, stirring occasionally, until the raspberries have softened and released their juices. Once cooked, remove from heat and allow to cool slightly. For a smoother puree, blend the mixture until smooth and then strain it through a fine-mesh sieve to remove the seeds if preferred.

    Make the Yogurt Base: In a separate mixing bowl, combine the Greek yogurt, vanilla extract, and a pinch of salt. Whisk together until the mixture is smooth and well incorporated.

      Layer the Pops: Begin assembling your popsicle molds by spooning a layer of the yogurt mixture into the bottom of each mold, filling them about one-third of the way. Next, add a spoonful of the raspberry puree on top of the yogurt. Using a toothpick or skewer, gently swirl the raspberry puree into the yogurt to create a beautiful marbled effect. Continue to alternate layers of yogurt and raspberry puree until the molds are filled, finishing with an extra dollop of raspberry puree on top for garnish.

        Insert Sticks and Freeze: Carefully place the popsicle sticks into the molds, ensuring they are centered. Freeze the pops for at least 4-6 hours, or until they are completely solid.
