2 cups fresh peaches, peeled and diced

1 cup whole milk

1 teaspoon vanilla extract

1/2 teaspoon salt

1/4 teaspoon almond extract

For the Cookies:

1 1/2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 cup unsalted butter, softened

1/4 cup brown sugar, packed

1 large egg

1 teaspoon ground cinnamon

A pinch of ground nutmeg

Make the Peach Ice Cream:

    - In a medium mixing bowl, combine the diced peaches, 1/4 cup of granulated sugar, and lemon juice. Toss the peaches well to coat with the sugar and juice. Let this mixture sit at room temperature for about 30 minutes to macerate and develop flavors.
