2 cups mixed frozen berries (such as strawberries, blueberries, and raspberries)

1 cup Greek yogurt (choose between vanilla or plain)

1 ½ cups granola (your favorite flavor)

2 tablespoons honey or maple syrup

¼ teaspoon vanilla extract (optional for added flavor)

Fresh mint leaves for garnish (optional)

Instructions
 

Prepare the Fruit: If the frozen mixed berries contain larger strawberries, chop them into smaller bite-sized pieces. Let the mixed berries sit at room temperature for approximately 10 minutes to partially thaw and soften for easier mixing.

    Mix the Yogurt: In a medium-sized mixing bowl, combine the Greek yogurt with honey (or maple syrup) and the optional vanilla extract. Stir well until the mixture is smooth and all ingredients are fully blended together.

      Assemble the Cups:

        - Use small cups or silicone muffin tins for easy removal.

          - Begin by placing about 2 tablespoons of granola at the bottom of each cup to create a base layer.

            - Add a generous layer of the yogurt mixture, filling each cup to about halfway.

              - Distribute the thawed mixed berries evenly over the yogurt layer, ensuring each cup gets a fair share.

                - Add another layer of yogurt on top of the berries, followed by an additional sprinkle of granola to finish with a delightful crunch.

                  Freeze: Carefully place the assembled granola cups into the freezer. Allow them to freeze for a minimum of 2-3 hours, or until they are completely set and firm.

                    Serve: Once fully frozen, remove the cups from the freezer. If you used a muffin tin, gently stretch the sides of each cup to release the granola cups.

                      - You can serve them frozen, or let them sit at room temperature for a few minutes to soften slightly, making them easier to eat. For an elegant touch, garnish with fresh mint leaves before serving.
