Frozen Blueberry Yogurt Pops

These homemade pops combine fresh or frozen blueberries with creamy Greek yogurt for a refreshing dessert that's free from added sugars and artificial ingredients. Ingredients
  

2 cups fresh or frozen blueberries

1 cup Greek yogurt (plain or vanilla)

1/2 cup honey or maple syrup (feel free to adjust for your desired sweetness)

1 tablespoon freshly squeezed lemon juice

1/2 teaspoon vanilla extract (optional for an extra flavor boost)

A pinch of salt

Optional toppings: extra blueberries, granola, or finely chopped nuts

Instructions
 

Prep the Blueberries: Start by rinsing fresh blueberries thoroughly under cold running water. If you’re using frozen blueberries, there’s no need to thaw them completely; simply break them apart gently to ensure even blending.

    Blend the Mixture: In your blender, combine the blueberries, Greek yogurt, honey or maple syrup, lemon juice, vanilla extract (if using), and a pinch of salt. Blend on high speed until the mixture is perfectly smooth, but leave a few blueberry chunks for added texture if you prefer.

      Taste and Adjust: After blending, taste the mixture. If you desire more sweetness, add additional honey or maple syrup to your taste, and blend again briefly to incorporate.

        Fill Your Molds: Carefully pour the blueberry yogurt blend into ice pop molds, filling them about 3/4 full to allow room for the mixture to expand as it freezes. If incorporating toppings, drop in a handful of extra blueberries or a sprinkle of granola into each mold before adding the mixture.

          Insert Sticks: Insert the sticks according to the manufacturer's instructions if your molds include them.

            Freeze: Transfer the filled molds to the freezer. Allow them to freeze for at least 4-6 hours, or until fully solid. For the best texture, freezing overnight is recommended.

              Unmold and Serve: To easily release your pops, briefly run warm water over the outside of the molds for a few seconds. Carefully pull the pops out and indulge immediately! For an extra special treat, dip them in melted dark chocolate and roll in crushed nuts or granola.

                Storage: Any leftover pops can be stored in an airtight container or individually wrapped with plastic wrap and placed back in the freezer for up to 2 weeks.
