2 medium eggplants, sliced into thin rounds

1 cup shredded sharp cheddar cheese (or a vegan cheese alternative)

1 cup black beans, rinsed and drained

1 ripe avocado, diced

1 cup sour cream or Greek yogurt (or non-dairy yogurt)

Fresh cilantro, chopped (for garnish)

For the Hatch Salsa:

4 ripe tomatoes, diced

1-2 Hatch green chilies, roasted, peeled, and chopped (or use poblano as a substitute)

1/4 red onion, finely chopped

1 clove garlic, minced

Juice of 1 lime

Instructions
