Crunchy Nacho Chickpea Salad

1 can (15 oz) chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cup corn kernels (can be fresh, frozen, or canned)

1 small red onion, finely chopped

1 red bell pepper, diced

1 ripe avocado, diced

1 cup shredded sharp cheddar cheese (or a dairy-free cheese alternative)

1 cup corn tortilla chips, roughly crushed

1/4 cup fresh cilantro, finely chopped

1 teaspoon ground cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Juice of 1 lime (approximately 2 tablespoons)

3 tablespoons extra virgin olive oil

Salt and pepper, to taste

In a large mixing bowl, add the drained chickpeas, halved cherry tomatoes, corn kernels, finely chopped red onion, diced red bell pepper, and diced avocado. Gently mix the ingredients together without mashing the avocado.

    In a separate small bowl, combine the lime juice, olive oil, ground cumin, chili powder, garlic powder, and a generous pinch of salt and pepper. Whisk these elements together until you achieve a smooth and cohesive dressing.

      Drizzle the prepared dressing over the chickpea mixture and toss gently to ensure all ingredients are well-coated without breaking down the avocado.

        Fold in the shredded cheddar cheese carefully, incorporating it evenly throughout the salad.
