Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line two baking sheets with parchment paper to make cleanup a breeze. This will also help prevent the veggie chips from sticking.

    Prepare the Vegetables: Carefully wash and peel the sweet potato and beet using a vegetable peeler. Using a mandoline slicer set to 1/8 inch or a sharp knife, slice all the vegetables into thin, even rounds. Consistent thickness ensures even cooking and maximizes crispiness.

      Toss in Seasoning: In a large mixing bowl, combine the sliced sweet potato, beet, zucchini, and carrot with olive oil, garlic powder, smoked paprika, sea salt, and black pepper. Toss the vegetables thoroughly to ensure every piece is coated with the oil and spices for optimal flavor.
