2 cups fresh Hatch green chiles, roasted and chopped (or jarred if out of season)

1 lb ground beef (or lean turkey for a lighter dish)

1 can (15 oz) black beans, rinsed and drained

1 can (15 oz) kidney beans, rinsed and drained

1 can (28 oz) diced tomatoes, with juices

1 medium onion, diced

3 cloves garlic, minced

1 tablespoon olive oil

2 tablespoons chili powder

1 tablespoon ground cumin

1 teaspoon smoked paprika

1 teaspoon dried oregano

Salt and black pepper to taste

1 cup beef or vegetable broth (for a vegetarian option)

Optional toppings: shredded cheese, sour cream, diced avocado, chopped cilantro

Prepare the Hatch Chiles: If using fresh Hatch chiles, roast them either over an open flame or in a preheated oven until the skins become charred and blistered. Allow them to cool before peeling off the skins and chopping.

    Sauté the Aromatics: Heat olive oil in a large skillet over medium heat. Add the diced onion and sauté until it turns translucent, about 5 minutes. Incorporate the minced garlic and sauté for an additional minute, then remove the skillet from the heat.

      Brown the Meat: In the same skillet, add the ground beef or turkey. Cook, stirring occasionally, until the meat is fully browned. Season with salt, pepper, chili powder, cumin, smoked paprika, and oregano. If there’s excess fat in the skillet, drain it carefully.
