1 pound ground turkey

1 teaspoon dried thyme

1 teaspoon dried rosemary

2 cups fresh spinach or kale, roughly chopped

Fresh parsley, chopped, for garnish (optional)

Sauté the Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the finely chopped onion, diced carrots, and diced celery. Sauté the mixture for about 5-7 minutes, stirring occasionally, until the vegetables become softened and aromatic. Then, add the minced garlic and cook for an additional 1-2 minutes, just until fragrant.

    Cook the Turkey: Incorporate the ground turkey into the pot. Using a wooden spoon, break it apart and cook until fully browned and no longer pink, approximately 6-8 minutes. Season the mixture with salt, pepper, dried thyme, and rosemary, stirring well to combine.
