Creamy Herb Chicken Rice Bowls

2 cups jasmine rice, cooked

1 lb chicken breast, diced into bite-sized pieces

2 cups fresh spinach, washed and drained

1 cup cherry tomatoes, halved

1 cup heavy cream

2 tablespoons olive oil

4 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried basil

Salt and pepper, to taste

1/4 cup grated Parmesan cheese

Fresh parsley, chopped, for garnish

Cook the Rice: Begin by rinsing the jasmine rice under cold water until the water runs clear. Cook the rice according to package instructions. Once done, fluff with a fork and set aside.

    Sauté the Chicken: Heat the olive oil in a large skillet over medium heat. Add the diced chicken breast and season with salt, pepper, thyme, and basil. Cook for approximately 5-7 minutes, stirring occasionally, until the chicken is browned on the outside and fully cooked through. Once done, transfer the chicken to a plate and set aside.
