8 oz (225g) fettuccine pasta

2 tablespoons olive oil

2 boneless, skinless chicken breasts (about 1 lb / 450g)

Salt and freshly cracked black pepper, to taste

4 cloves garlic, finely minced

1 cup (240ml) heavy cream

1 cup (100g) freshly shredded Parmesan cheese

2 cups fresh baby spinach

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional, for a spicy kick)

Fresh parsley, finely chopped (for garnish)

Cook the Pasta: Begin by bringing a large pot of salted water to a rolling boil. Add the fettuccine and cook according to the package directions until al dente. Once done, reserve 1/2 cup of the pasta cooking water for later use, then drain the pasta and set it aside.

    Sear the Chicken: While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Generously season both sides of the chicken breasts with salt and freshly cracked black pepper. Carefully place the chicken in the skillet, cooking for about 5-7 minutes on each side, or until it is golden brown and fully cooked through (an internal temperature of 165°F/75°C). Once cooked, remove the chicken from the skillet and let it rest for a few minutes; then slice it into strips.

      Prepare the Sauce: In the same skillet, reduce heat to medium and add the minced garlic. Sauté for about 1 minute, or until fragrant and just beginning to turn golden. Carefully pour in the heavy cream, stirring it as it warms, and bring it to a gentle simmer. Gradually add the freshly shredded Parmesan cheese, stirring continuously until it melts and forms a smooth, creamy sauce.

        Combine Ingredients: Add the drained fettuccine and fresh spinach to the skillet with the creamy sauce. Gently toss all the ingredients together until the pasta is well coated in the sauce and the spinach has wilted down. If you find the sauce is too thick, gradually mix in some reserved pasta water until you reach your desired consistency.
