8 oz tri-color rotini pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup black olives, pitted and sliced

1/2 cup feta cheese, crumbled

1/4 cup red onion, finely chopped

1/4 cup fresh parsley, chopped

1/3 cup extra virgin olive oil

2 tbsp red wine vinegar

1 tsp dried oregano

Salt and black pepper, to taste

Cook the Pasta: Fill a large pot with water and add a generous amount of salt. Bring the water to a rolling boil. Add the tri-color rotini pasta and cook according to the package instructions, usually around 8-10 minutes, or until al dente. Once cooked, drain the pasta in a colander and rinse thoroughly under cold running water to stop the cooking process and cool it down.

    Prepare the Vegetables: While the pasta is cooking, use a cutting board and knife to chop the cherry tomatoes in half, dice the cucumber, and finely chop the red bell pepper, red onion, and black olives. Place them in a mixing bowl and set aside.

      Make the Dressing: In a separate small bowl, combine the extra virgin olive oil, red wine vinegar, dried oregano, and a pinch of salt and pepper. Whisk the ingredients together vigorously until the mixture is emulsified and well blended.

        Combine Ingredients: In a large mixing bowl, add the drained and cooled rotini pasta along with the prepared cherry tomatoes, cucumber, red bell pepper, black olives, crumbled feta cheese, chopped red onion, and parsley.

          Dress the Salad: Pour the dressing over the pasta mixture. Using a spatula or large spoon, gently toss all the ingredients together until every component is evenly coated with the dressing. Taste the salad and adjust the seasoning with additional salt and pepper if desired.
