Cold Mediterranean Chicken Salad

2 cups cooked chicken breast, shredded into bite-sized pieces

1 cup cherry tomatoes, halved

1 cucumber, diced

1 red bell pepper, diced

1/2 red onion, finely chopped

1 cup Kalamata olives, pitted and halved

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and pepper, to taste

Prepare the Ingredients: Begin by shredding the cooked chicken breast into bite-sized pieces. Set it aside. Gather all your fresh vegetables, olives, and herbs for easy access.

    Mix the Dressing: In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, dried oregano, salt, and pepper until well emulsified. Taste and adjust seasoning as needed.

      Combine the Salad: In a large mixing bowl, add the shredded chicken, halved cherry tomatoes, diced cucumber, diced red bell pepper, finely chopped red onion, halved Kalamata olives, crumbled feta cheese, chopped parsley, and chopped mint.
