1 can (15 oz) chickpeas, drained and thoroughly rinsed

1 cup cucumber, diced into small cubes

1 cup cherry tomatoes, halved

1/2 medium red onion, finely chopped

1/3 cup Kalamata olives, pitted and coarsely chopped

1/2 cup feta cheese, crumbled

1/4 cup fresh parsley, finely chopped

1/4 cup fresh dill, finely chopped

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon fresh lemon juice

1 teaspoon dried oregano

Salt and pepper, to taste

4 large whole wheat wraps or lettuce leaves (for a low-carb option)

    - In a large mixing bowl, combine the drained chickpeas, diced cucumber, halved cherry tomatoes, finely chopped red onion, and chopped Kalamata olives. Use a fork to gently mash about half of the chickpeas to add creaminess to the salad.

        Make the Dressing:
