1 cup fresh strawberries, hulled and halved

1 cup chocolate protein powder (your preferred brand)

1/2 cup almond flour

1/4 cup honey or maple syrup

1/4 cup creamy almond butter (or use peanut butter)

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1 cup dark chocolate chips (for coating)

1 tablespoon coconut oil (for melting chocolate)

Optional: crushed nuts or shredded coconut for garnish

Prepare the Strawberry Filling: Begin by washing the strawberries under cool water. Remove the green tops (hull) and cut them in half. Gently pat them dry with a paper towel to remove excess moisture, which could interfere with the filling process. Set the strawberries aside.

    Make the Protein Bite Mixture: In a large mixing bowl, combine the chocolate protein powder, almond flour, honey (or maple syrup), almond butter, vanilla extract, and salt. Use a spatula or wooden spoon to mix the ingredients thoroughly until they form a cohesive dough-like consistency. If the mixture feels too dry and crumbly, incrementally add one tablespoon of water or almond milk until smooth and well-blended.

      Form the Bites: Take approximately one tablespoon of the protein mixture and shape it into a flat disc in your palm. Place one halved strawberry in the center of the disc and carefully wrap the protein mixture around the strawberry, ensuring it is completely enclosed. Repeat this step with the remaining protein mixture and strawberries, then arrange the finished protein bites on a parchment-lined baking sheet to keep them from sticking.

        Chill the Bites: Transfer the baking sheet filled with protein bites to the freezer and let them chill for about 30 minutes, allowing them to firm up.

          Melt the Chocolate: In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Heat the mixture in the microwave in 30-second intervals, stirring after each interval, until the chocolate is completely melted and smooth.
