2 cups fresh or frozen cherries, pitted

1 cup granulated sugar, divided

1 tablespoon fresh lemon juice

1 cup almond meal (or finely ground almonds)

1/2 cup unsweetened shredded coconut

1/2 cup rolled oats

1/2 teaspoon sea salt

1/4 cup melted coconut oil

1/2 teaspoon vanilla extract

1 cup Greek yogurt or dairy-free yogurt (for a creamier layer)

Optional: Fresh mint leaves for garnish

Prepare the Cherry Mixture: In a medium saucepan, combine the pitted cherries, 1/2 cup of granulated sugar, and lemon juice. Cook over medium heat for approximately 10 minutes, stirring occasionally to prevent sticking, until the cherries soften and release their juices. Once done, remove from heat and allow to cool for a few minutes.

    Make the Crust: In a large mixing bowl, combine almond meal, shredded coconut, rolled oats, sea salt, and the remaining 1/2 cup of granulated sugar. Pour in the melted coconut oil and vanilla extract. Mix thoroughly until all ingredients are well combined and form a crumbly texture that holds together when pressed.

      Assemble the Bars: Line an 8-inch square baking dish with parchment paper, leaving some overhang on the sides for easy removal. Using your hands or a spatula, press two-thirds of the crust mixture evenly into the bottom of the lined dish to create a firm base. Carefully spread the cooled cherry mixture evenly over the crust. Dollop spoonfuls of the Greek yogurt on top, gently smoothing out with the back of a spoon or spatula. Finally, sprinkle the remaining crust mixture over the yogurt layer for a crunchy topping.

        Chill: Cover the baking dish with plastic wrap or a lid, and place it in the refrigerator to chill for at least 4 hours, or until the bars are fully set and cool.

          Serve: Once chilled, pull the parchment paper edges to lift the entire block of bars from the dish. Place on a cutting board and slice into squares. If desired, garnish each bar with a fresh mint leaf for a pop of color and flavor.
