Ingredients

2 ripe avocados, peeled and pitted

2 cups frozen peas, thawed

2 cups vegetable broth (preferably low sodium)

1 cup fresh cilantro leaves, tightly packed

1/2 cup Greek yogurt (or a dairy-free alternative, such as coconut yogurt)

2 tablespoons freshly squeezed lime juice

1 tablespoon extra virgin olive oil

1 clove garlic, minced

Salt and black pepper, to taste

Optional garnishes: Thinly sliced radishes, fresh microgreens, and an extra drizzle of olive oil

Instructions

In a high-powered blender or food processor, combine the peeled avocados, thawed peas, vegetable broth, fresh cilantro leaves, Greek yogurt, lime juice, olive oil, and minced garlic.

Blend the mixture on high speed until you achieve a velvety smooth consistency. If necessary, pause to scrape down the sides to ensure all ingredients are thoroughly blended together.

Taste the creamy concoction and season with salt and black pepper according to your palate. Blend again for a few seconds to incorporate the seasonings.

Once fully blended, pour the soup into a large bowl or airtight container. Cover securely and refrigerate for at least 1 to 2 hours to chill and let the flavors meld.

When you're ready to serve this delightful soup, give it a gentle stir. If the mixture is too thick for your preference, gradually add a splash of vegetable broth until you reach your desired consistency.

Ladle the chilled soup into individual serving bowls. To elevate the dish's presentation, artfully garnish each bowl with thinly sliced radishes, a sprinkle of fresh microgreens, and a light drizzle of olive oil for an added burst of flavor and elegance.
