1 lb boneless, skinless chicken breasts, cut into 1-inch cubes

2 tbsp olive oil

2 tbsp soy sauce

1 tbsp honey

1 tsp garlic powder

1/2 tsp sea salt

1/4 tsp freshly ground black pepper

Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes to prevent burning)

1 large ripe mango, peeled and diced into small cubes

1/2 red onion, finely chopped

1 red bell pepper, diced

1 jalapeño, seeded and minced (add for extra heat, or omit for milder salsa)

Juice of 1 lime (about 2 tbsp)

2 tbsp fresh cilantro, finely chopped

Sea salt, to taste

Marinate the Chicken: In a medium mixing bowl, whisk together the olive oil, soy sauce, honey, garlic powder, smoked paprika, cumin, sea salt, and black pepper until well blended. Add the cubed chicken pieces to the marinade, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, allowing the flavors to infuse, or up to 2 hours for a more robust taste.

    Prepare the Mango Salsa: In a separate bowl, combine the diced mango, finely chopped red onion, diced red bell pepper, and minced jalapeño (if using).
